727 Pine Wine Cellar
The Wine Cellar dining room,
located one floor below the
main dining area of 727 Pine
Restaurant, is available for
private functions for up to
75. A mahogany bar,
custom-made sconces, and
wrought iron chandeliers
give an aura of European
elegance as guests descend
into The Cellar. Heavy
wooden doors open into the
cavernous room that was
designed to look and feel
like a giant wine barrel
with trisected arched wooden
ceilings, supporting staves,
and suspended octagonal
lanterns. Leather partitions
enhance the atmosphere for
more intimate functions.
Three of the walls are
framed in natural rock,
while the fourth separates
the dining room from the
collection, which is
displayed behind oversized
glass doors to the right of
the dining room and is
comprised of full flavored
wines for 727 Pine's full
flavored foods. There are a
number of food-friendly
whites from all over the
world, in addition to a
variety of fruit-driven
Cabernet-based American
reds, so a table can share
one or two bottles with
optimum pairings for the
diverse, innovative menu.

This stylish downtown
restaurant is located in the
Grand Hyatt Seattle. Our
high energy atmosphere and
decor is the perfect match
for a menu created by Chef
de Cuisine, Shannon Galusha,
which is designed around
great seafood and steaks.
Nightly fare includes
Salmon, Halibut, Seafood
Mixed Grill, an assortment
of Prime steaks and market

area. The Onyx suite has water
and city views. This is the perfect suite

These suites are located on
the upper floors of Grand
Hyatt Seattle. Most offer
spectacular views of the
Puget Sound and Seattle. All
Executive suites include a
living room and bedroom
separated by Cherry Wood
Sogi Screen Double Doors.
Each living room includes a
wetbar area with
refrigerator and 1/2 bath.
The bed rooms includes a
bathroom with a seperate
shower and bathtub. The
showers are upgraded with
dual shower heads (1
permanent and 1 adjustable.)
The bathtubs are large and
ample and complete the bath
area. The suite is accented

The Emerald suites are
located on the upper floors
of Grand Hyatt Seattle, most
offering spectacular views
of the Puget Sound and
Seattle. There is a large

desk and has a walk-in
closet. Each of these suites
has one king-sized bed, one
bathroom, a large entry with
hall closet and bench. Electric blinds and
feather top mattresses are

Our guestrooms are furnished

double sized beds and are
located with a variety of
city views. They have
