727 Pine Wine Cellar
The Wine Cellar dining room, located one floor below the main dining area of 727 Pine Restaurant, is available for private functions for up to 75. A mahogany bar, custom-made sconces, and wrought iron chandeliers give an aura of European elegance as guests descend into The Cellar. Heavy wooden doors open into the cavernous room that was designed to look and feel like a giant wine barrel with trisected arched wooden ceilings, supporting staves, and suspended octagonal lanterns. Leather partitions enhance the atmosphere for more intimate functions. Three of the walls are framed in natural rock, while the fourth separates the dining room from the collection, which is displayed behind oversized glass doors to the right of the dining room and is comprised of full flavored wines for 727 Pine's full flavored foods. There are a number of food-friendly whites from all over the world, in addition to a variety of fruit-driven Cabernet-based American reds, so a table can share one or two bottles with optimum pairings for the diverse, innovative menu.

727 PINE
This stylish downtown restaurant is located in the Grand Hyatt Seattle. Our high energy atmosphere and decor is the perfect match for a menu created by Chef de Cuisine, Shannon Galusha, which is designed around great seafood and steaks. Nightly fare includes Salmon, Halibut, Seafood Mixed Grill, an assortment of Prime steaks and market seafood featuring local oysters and jumbo prawns.

The Onyx suite is located on the 30th floor. This suite has several amenities including a stone entry with hard wood floors throughout. The bedroom bathroom is appointed with a double-headed shower (1 permanent head / 1 hand held on opposite wall) and a large tub area. The bedroom includes a powder room, seating area and walk-in closets. The living area includes a large dining room (seats 8), wet bar and separate service entrance. There is also a large living room with a library and sitting area with a desk, a fireplace, and a game table area. The Onyx suite has water and city views. This is the perfect suite for any very special occasion.

Vesuvio Suite
Vesuvio Suite, 1354 square feet.
The Vesuvio has a stone entry and hard wood floors throughout the suite with area rugs.The bedroom bathroom includes, one four-fixture bathroom (double headed shower with 1 permanent head / 1 hand held on opposite wall) with large tub. The bedroom includes walk-in closets and large work area with a king size bed. The living area includes a 1/2 bath in entry, dining table (seats 8), and butler pantry with a separate service entrance. Cherry wood, Sogi Screen double doors separate living room from bedroom area.

Carrera Suite
Carrera Suite, 1354 square feet.
The Carrera Suite has a stone entry and hard wood floors throughout the suite with area rugs. The Carrera Suite includes, one four-fixture bathroom, 1/2 bath in entry, dining table (seats 8), and butler pantry with a separate service entrance. Cherry wood, Sogi Screen double doors separate living room from bedroom, which has one king-sized bed. Upper floor views and the same amenities and technology as the guestrooms.

Executive Suite
Executive Suite, 812 square feet.
These suites are located on the upper floors of Grand Hyatt Seattle. Most offer spectacular views of the Puget Sound and Seattle. All Executive suites include a living room and bedroom separated by Cherry Wood Sogi Screen Double Doors. Each living room includes a wetbar area with refrigerator and 1/2 bath. The bed rooms includes a bathroom with a seperate shower and bathtub. The showers are upgraded with dual shower heads (1 permanent and 1 adjustable.) The bathtubs are large and ample and complete the bath area. The suite is accented with dark luxurious colors and woods and include electric blinds and feather top mattresses.

Emerald Suite
Emerald Suite, 823 square feet
The Emerald suites are located on the upper floors of Grand Hyatt Seattle, most offering spectacular views of the Puget Sound and Seattle. There is a large living area, which flows into a large bedroom with a desk and has a walk-in closet. Each of these suites has one king-sized bed, one bathroom, a large entry with hall closet and bench. Electric blinds and feather top mattresses are standard suite amenities as well.

Deluxe Guestroom
Guestroom 380-428 sq. ft. floors 23-30
Our guestrooms are furnished with either a king or 2 double sized beds and are located with a variety of city views. They have oversized four-fixture bathrooms with separate glass enclosed showers, comfortably equipped workspaces with custom leather chairs and high speed Internet access. These rooms also include upgraded furniture and upgraded in room amenities.

Corner Suite
Corner Suite, 468 square feet
These rooms have a corner vantage point affording a variety of city and water views. They have a separate sitting room and desk workspace with high speed Internet access. All Corner suites have king sized beds, a double closet and oversized four-fixture bathrooms with separate enclosed showers.
